THE PRODUCTS

"Il Termine" produces extra virgin olive oil, Vin Brusco (sharp wine), spelt, Vin Santo:

The extra virgin olive oil

The olive varieties grown are Frantoio, Pendolino, Leccino, Morcaio and a limited quantity of Moraiolo.

Olive picking takes place early, between the end of October and the beginning of November, when the flavour and aroma of olives are at their peak, to produce an oil that undergoes as little a change as possible over time.

Vin Brusco

This is a wine produced from autochthonous vines now almost entirely disappeared which confer to the wine unique fragrances and aromas which change every year.

Slightly sweet and sparkling with an alcohol content ranging from 11 to 13 degrees centigrade and over, it can be matched with almost any type of food.

Spelt

Largely ignored for a long time, spelt has now found a new popularity.

It is excellent together with bean or chick-pea soup, with thick minestrone soup or eaten cold in summer as a salad with chopped gherkins, onion and tuna.

Vin Santo

Vin Santo was once drunk exclusively during important ceremonies such as weddings and christenings.

Only limited quantities of excellent quality Vin Santo can be produced, only a small quantity should be poured into the glass and only small sips should be taken to be relished slowly.
