THE PLANT
The olive tree begins to bear fruits after approx. 5 years from its planting.
A rather long time (30 to 40 years) is necessary for it to reach peak development during which time the olive requires a great deal of care.
OLIVE MATURATION AND HARVESTING PERIOD
Olives are picked around November, according to the climate. They are hand-picked to ensure a superior quality oil.
The olives fall onto a net placed under the tree crown and are then picked and placed in boxes.
In such conditions storage should not exceed 72 hours, the shorter the time between picking and pressing, the better the quality of the oil will be.
We suggest you visit our hills between the end of November and the first half of December when the olives are pressed. You can watch the olive-picking and pressing and taste a "bruschetta", slices of toasted Tuscan bread laced with the delicious, freshly pressed olive oil.
