ROSEMARY-SEASONED
TAGLIATELLE
WITH ZOLFINI BEANS AND SAUSAGES
Ingredients to serve 6:
For the pasta: 500 g (5 cups) flour, 5 eggs,
a pinch of salt, 3 sprigs rosemary
For the sauce: 300 g (2/3 pound) zolfini
beans, 4 cloves garlic, 300 g (2/3 pound)
fresh pork sausages, 1 dl (2/5 cup) olive
oil, 3 leaves sage, black pepper.
Preparation time: 1 hour
Cooking time: 2 hours for the beans,
3 minutes for the pasta
Difficulty: high
Boil the beans in abundant water with 2
cloves of garlic. In the meantime, strip the
leaves from the sprigs of rosemary and mince
them very finely. Make a mound of the flour,
scoop a well in it, and crack the eggs into
the well. Add a pinch of salt and the
rosemary, beat lightly, and begin to
incorporate the flour, continuing until all
is incorporated and the dough is homogenous.
Knead well, until the dough is smooth and
elastic, shape it into a ball, cover it with
a cloth, and let it rest in a cool place for
about a half hour.
While the dough rests, remove the casings
from the sausages and crumble them into a
skillet; breaking the pieces up with a fork,
and simmer. Heat the oil in a pot with the
sage, salt very lightly, and add the beans.
Add the sausage using a slotted spoon and
simmer the mixture over a low flame for
about 20 minutes. Roll out the pasta dough
quite thin with a rolling pin or a pasta
machine, roll up the sheet thus obtained and
cut the roll crosswise into slices less than
a cm (1/3 inch) wide; shake them out to
obtain the tagliatelle.
Cook the tagliatelle in abundant salted
water, drain them, and combine with the
beans, mixing well. Dust with freshly ground
black pepper.
Egg pasta can also be made with just the
yolks; its flavor will be much stronger and
its texture will be almost creamy. Among the
other herbs that can be used to flavor pasta
are garlic (with the green heart removed)
and spring onions. It is best to roll the
sheet out with a rolling pin; the surface of
the sheet will be rougher and the sauce will
stick to it better. Those who must can add
tomato to the beans and sausages. Grated
cheese will be a less successful addition.
